St. Patrick and Pie

Happy Belated St. Patrick's Day.  What did you do?  Did you go out and drink green beer?  In our household we of course crafted and cooked something delicious.

I made Addison's teachers 4 leaf clover pins so they would have good luck and not get pinched.  Hubby helped me because he is excellent at making the covered buttons.  This is the last year I will make Addison's teachers pins and school is almost over.  It is a little bittersweet.



For dinner, I wanted to do something different.  I usually make corned beef and cabbage on St. Patrick's Day but I remembered a great Martha Stewart recipe, a Braised Short Rib, Stout, and Potato Potpie.  We all know how much I love to braise meat and this recipe calls for braising it in Guinness.  I thought this would be a perfect St. Patrick's meal.



This recipe can be made for 8 individual mini pie plates or a 12-inch gratin dish.   I decided to make on big pie.  I totally want to go shopping for mini pie plates for the next time.  Oh what about mini gratin ones?  I have totally had my eye on these for a year:


Oh mini Cocottes so everyone could have their own potpie or individual mac n cheese.  What about individual cobblers?  Wait a minute I was talking about our St Patrick's day meal!  I get sidetracked easily when it comes to shopping.  :)

Oh I tried to take step by step pictures, but taking pictures of ingredients cooking in a dark Dutch Oven is not very pretty.  

Filling:

4 pounds boneless short ribs, cut into 2-inch pieces
Coarse salt and freshly ground pepper
1/3 cup all-purpose flour
3 tablespoons safflower oil
1 medium yellow onion, halved and thinly sliced
5 garlic cloves, thinly sliced
2 bottles (12 ounces) stout, preferably Guinness (3 cups)
2 rosemary sprigs
1 pound cipollini onions, peeled



Preheat oven to 300 degrees. Season short ribs with salt and pepper. Dredge short ribs in flour, coating all sides. Transfer to a large plate.


Heat oil in a large Dutch oven over high heat. Working in batches, brown short ribs, about 1 minute per side.



Transfer browned meat to a plate.


Add yellow onions and cook until golden, about 8 minutes.  Add garlic and cook for 2 more minutes. 





Return meat to the Dutch oven with onions and garlic.  Also add rosemary and Guinness. Bring to a simmer and then cover place in oven.  Cook for about 2 1/2 hours.


Remove Dutch oven from oven and cipollini onions.  Cook for an additional 30 more minters, the meat should be tender and the onions should be cooked through.  




Shred meat.  Season with salt and pepper.  Put filling in pie plate or individual mini Couettes.  


Topping

6 medium russet potatoes (3 1/2 pounds)
Extra-virgin olive oil, for brushing
Coarse salt and freshly ground pepper



Raise the oven to 375.  Slice potatoes very thinly.  I used my Christmas Food Processor.  Have I mentioned how much I love it?  Arrange potatoes over meat to form tight concentric circles, working around the edge and overlapping each potato by three-quarters.


Brush the potatoes with oil and sprinkle them with salt and pepper.   Put pie or pies in oven and bake for about an hour. 



Isn't it beautiful?  I had so much fun with the potatoes.  Addison said it looked like a flower.  Here is the recipe with out the pictures.  

Filling:

Reduce heat to medium. Add yellow onion to Dutch oven, and cook until golden, about 8 minutes. Add garlic. Cook for 2 minutes. Return meat to Dutch oven. Add stout and rosemary. Bring to a simmer. Cover, and transfer to oven. Bake for 2 1/2 hours.
Remove Dutch oven from oven, and add cipollini onions. Braise until meat is tender and onions are cooked through, about 30 minutes. Shred meat using 2 forks. Season with salt and pepper. Divide filling among eight mini (1-cup) pie plates, or transfer to a 12-inch (8-cup) gratin dish.

Topping

Make the topping: Raise oven temperature to 375 degrees. Peel potatoes, and very thinly slice each (preferably on a mandoline). Arrange potatoes over meat to form tight concentric circles, working around the edge and overlapping each potato by three-quarters. Brush with oil, and sprinkle with salt and pepper. Bake until topping is golden and filling is bubbling, about 45 minutes for mini potpies (1 hour for large potpie).



And there is our delicious St. Patrick's Potpie.  It was amazing.  Hubby did not complain because it his 3 favorite things; beer, potatoes, and meat.  

I almost forgot to mention The Chosen One had never heard of cipollini onions.  I think it is great when I teach her something new since she is a genius and an excellent cook.  So Gold medal for me.  :)

Favorite Things

So it's Wednesday.  Remember I was going to tell you my favorite things every Wednesday. 

So I was wondering if I should tell you about my favorite kitchen things.  My friend Melissa received an Williams-Sonoma gift card and ask what she should buy with it.  I had to think there are so many things I love there.  So I thought about it and asked Addison.  Addison helps me cook most of the time so I try to get tools that make it easier for him to help and just make my life easier too.  So we have some great kitchen tools.

1.  Hand Chopper -  we have two hand choppers.  Michael got me the VeggieChop for my birthday last year and then I purchased the Rosle Multi Chopper 5 months ago.  They both work great, the Rosle comes with a basket and extra accessories so you can do more with it, like chop herbs and make salad dressing.   We use them everytime we cook.   Addison doesn't mind chopping onions or green peppers.  Chopping is easy, no stinging the eyes, and clean up is even easier.  I even puree my fruit with these for baking and making ice cream.  I have a food processor but I hate using it all the time, it can be a pain.  That is why I love these little choppers. 



2.  The strawberry huller - I always get fresh strawberries.  We eat them with fresh whip cream, or I make strawberry ice cream, or I use them for baking.  The one thing I hate is taking the stem off of them.  After 5 strawberries, your thumb and thumb nail hurt.  This little gadget does it for you and it so easy.  Addison will ask to do the whole bowl of strawberries.  Another thing that's wonderful about this is it doesn't just remove the steam and leaves, it removes the middle white part of your strawberry that can be bitter. 


3.  OXO Nonstick Tongs -I know you are thinking, "Tongs?"  But I use Tongs for everything when I cook.  From flipping meat, to picking up any type of food.  These tongs are great because the are non-stick but that's not really why I love them.  I love them beceause they lock shut. So they stay closed for storage which is great since I keep my tools in a drawer.  I threw away my other tongs after buying these.  I was going crazy everytime my drawer got stuck because the tongs were open and sideways.  

4.  JT's favorite thing- All-Clad Belgian Waffle Maker- OK JT's favorite thing might be the coffee maker but his second is definitely the waffle maker.  I bought him this nice one last year and he loves it.  JT cooks a big breakfast every weekend, yes he's that dad.   It's usually waffles, bacon, eggs, and sometimes grits or hash browns.  We have been through some waffle maker and he has said this is the best one.  I have only used it twice and I think it's nice but I'm not the waffle master like him.  So if JT loves it, it's great!


5. And last but not least, of course - My Kitchenaid Mixer - JT's mom bought me my Kitchenaid mixer last last Christmas and it was love at first sight.  She is the reason for all my baking.  I was baking before but no this much.  I love it so much it stays out so everyone can see it.  I can whip up batter in about 30 mins because of this mixer.  This is definitely my favorite tool in my kitchen. 


OK, if I don't stop now.  I won't have anything to talk about next Wednesday.  I have linked stuff to Williams-Sonoma website because that's where I bought most of my stuff.  My mixer was not bought there and it's not red it's silver.  I think The Godfather has the red one.  But, I know you can find most of the stuff at other places.  

I need to finish up some laundry before I go to class tonight.  This is my long night because I have lab so I won't be done with class until 10:30.  :(

Happy Valentine's Day AGAIN!

So since Addison was sick last Monday for Valentine's Day and I have had noting but test, I have finally sent out the rest of our Valentine's cards today.   Only the people that live in Georgia are receiving late Valentine's.  I think it's funny everyone else in the U.S. received theirs on Valentine's Day, usually it's the other way around.  They were almost completed so JT and Addison helped finish them up last night.  I couldn't just let them sit there and go to waste and I know I would not use them for next year.  I know next year I would want to create a whole new and different card.  So they are a week late but its the thought that counts.  Right?

Here's the card.  Better late than never.

I also planned to bake all these wonderful whoopie pies for Addison's class and teachers.  And make his class little red favor boxes with hershey kisses in them.  Well, Addison got sick last week and then went to Jekyll Island.  This week Addison is on winter break (I never had winter break).  So if I still decide to do all of this, it will be 2 weeks late.  I guess I'll just have to wait and see what happens this weekend.  

Ok enough about Valentine's Day until next Monday.  :)  I have noticed I was getting a lot of page views last week and only half from last week this week.  Am I not that interesting anymore?  I think if I don't blog everyday or every other day people loose interest.  So I was thinking I need a theme for each day.  Like every Wednesday mention things I love.  I'll try it out and see if it takes off. And would love for everyone to comment and tell me things they love too.  So here it goes......

Things I love

1.  My Keurig Coffee Machine - it makes delicious coffee and even hot apple cider.  It just depends on what K-cups you buy.  The Godfather bought this for us two Christmases ago and it is still our favorite.  Addison makes apple cider and hot cocoa with it in a flash.  And JT uses everyday for his morning coffee.  

2.  My iPad (of course) - Yes we are an Apple family.  We made the transition from PC to Mac about 4 years ago and have never looked back.  We have everything from iMacs to iPhones to Apple TV.  I love them all but the one thing I love is my iPad.  I do everything with it.  I have all my school textbooks on my iPad so all I bring to class is a notebook, a pen, a calculator, and my iPad.  Addison watches movies, plays games, and reads books on the iPad.  JT tries to use the iPad but we usually don't share with him.  : I surf the web,  shop, read all the blogs I love on my iPad.  I even watch movies while I'm in the tub on my iPad.  :)  And the best thing is I cook and bake with my iPad.  I have all my recipes saved and it's the smallest prettiest cookbook I have ever had.  


3. My new camera, Panasonic GF2 - I had to put my new toy.  It has made me so happy.  I am loving the way all my pictures are coming out.  Ving and I have decided to go to a photography class together and I might join a photography group.  I can tell this is going to be a new hobby that I'm going to love.  I have always loved taking pictures and now this camera has made want to learn how to be a great photographer.  The only problem is a need new models.  I think everyone is getting tired of Addison and dog pictures, but they are my babies.  


4.  My All-Clad Slow Cooker - This is the best slow cooker I have ever used.  I know you ask, "Why?, aren't all slow cookers the same?".  Well, this one is special because it comes with a cast aluminum insert.  You can brown your meat or cook your veggies in this insert on the stovetop!  You don't have to dirty up a skillet, the slow cooker does it all.  It goes from stovetop to slow cooker with ease.  I have made many things with this slow cooker and everything has turned out yummy and easy.  Using a slow cooker is easy to begin with and this makes it so easy there is not excuse not to use it.  


I think that's enough for today.  I noticed all of these items are electronics.  Well, I am a nerd and I am an electronic whore.  My husband jokes that I never want diamonds I want electronics.  But, electronics make our lives so much easier.  And they are so shiny and pretty.  :)  I hope to hear about everyone's things they love.  Addison would like to mention his is the Playstation 3.  :)










Getting ready for Valentine's Day

So I love Valentine's Day.  Not because I get an electronic every V Day.  But, I did pre-order my camera, hopefully it ships before Valentine's Day.  I love Valentine's Day because I love love.  I'm such a girl, I know.  I am a hopeless romantic and I just love what it stands for.  I love the kids giving out Valentine's cards, the heart shape boxes with chocolate, the balloons, the flowers.  Valentine's will be exciting the year because I have already planned a month ahead of time for what I am creating.  I want to do something special for Addison's teachers and our friends and family.  And since I have started making cards, the Valentine's cards this year will be extra special.

So I was going through my Martha Stewart Living magazine for this month and I found some really cute things for Valentine's Day.  Like these


You can download the template to make the cones. Just print it on white or cream cardstock and you have the cutest carnation cones.  I so want to do this for Addison's teachers.  I love it when Addison brings flowers to his teacher, it makes me believe he will have a lucky wife.  When his 2nd grade teacher's dog died he made me take him to  Whole Foods to get her some flowers.  I just love flowers and I feel like these cones make them really special.

I am also going to bake, of course.  I just bought Wilton's heart shape whoopie pie pan and I'm so excited.


I am thinking I will make red velvet, chocolate, and strawberry ones.  But they might just end up all being red velvet.  I do have the weekend to bake but I know what happens when I put to much on my plate.  

Oh and I will also be baking cupcakes.  I get the cutest cupcake wrappers at Bake it Pretty.  I order a month before a holiday and then can't wait to use them.  I purchased these this time.

If you love to bake I would recommend Bake it Pretty, they are located in Asheville, NC but they have an online shop.  They have the cutest stuff.  They even have straws, that I haven't bought yet because I don't see the purpose of paper straws unless you having a party.  Maybe this will give me a reason to throw a party.  :)


So last night, we just made steak, green beans, and mashed potatoes.  But I would like to share two things.  One is a while back a purchased theses potato gloves, and potato ricer from Williams-Sonoma




I keep telling people I will share my favorite things I get from there because they make my life so much easier.   The gloves can be used with any hard vegetable, like carrots.  Instead of peeling you just scrub your veggies, so you keep all the good nutrients since a lot of the vitamins are in the peel.  We love these gloves.  They are so easy and fun that Addison scrubs the veggies for me.  The potato ricer just makes mashing potatoes a snap.  It turns your potatoes to rice like grains and also gets rid of the peel, which I still put a some peel in my mashed potatoes.  

I also baked desert last night.  I got a recipe for Ooey Gooey Taffy Tart Squares from one of my favorite baking blogs Sweetapolita


 I was worried if they had come out right at first, they came out really gooey.  But, after putting them in the refrigerator over night they turned out good.  They taste like little pecan pie squares.  Addison has been snaking on them all day.  I had to give some away to classmates so they would get out of my house.  They are addictive.  

Well, I need to go work on some Valentine's cards and desk calendars.  I will keep everyone updated.  Let the Valentine's Day countdown begin.  



Lazy Sunday

It's beautiful here in Atlanta, sunny and in the 70s.  Instead of going outside and riding bikes or playing with the dogs, we actually spring cleaned.  JT has been out of town all week and I just wanted him to help me get some stuff done.  So we moved everything around in the kitchen and scrubbed.  We also organized and cleaned are bedroom.  Our bedroom always is the worse.  JT works so hard he just washes his laundry and then leaves it in a basket in the bedroom.  I also have the habit of trying clothes on and then putting them in the chair in our bedroom.  So because of this wonderful sunny day, that made us realize we needed to get some stuff done we cleaned.  We actually enjoyed the day together, we took breaks, talked, and did not turn on the television once.  Our kitchen and bedroom look great!!!

I found another craft project I love.  I can't wait to make these.  They are flower zippers.




I'm thinking about making these for my nieces so they can put them on headbands and hats.  I so need a little girl.  :)

We also made mint chocolate chip ice cream last night and it turned out Minty and Yummy. 


It's amazing how fresh mint taste compared to store bought ice cream.  I think Addison thought it was a little to minty but I loved it.  I got the recipe here from Williams-Sonoma.  My next flavors will be strawberry and raspberry chocolate.  The Godfather asked for raspberry chocolate ice cream.  

Super Bowl Sunday is next weekend and I'm already deciding what to make if The Godfather has a Super Bowl Party.  I'm thinking Shrimp de Gallo, Grilled Chicken and Pineapple Quesadillas, Mexican Layer Dip, and Olive and Artichoke Dip.  I got my inspiration and the recipes from The Pioneer Woman.  I love her blog. 

I also told Val I would make the girls (Alissa and Alexis) their birthday cake this year.  With luck, I ran across this cake from Sweetopolita.




Doesn't it look amazing.  It's a Neapolitan cake.  I told her I would make homemade ice cream also.  I just had to make chocolate, vanilla, and strawberry ice cream if I was going to make this beautiful cake.  I hope it turns out.  JT is professional at icing (he's more patient than me) so he will be helping out on this one.  I'm thinking maybe I could make one for the Super Bowl party for a trial run.  All the men will be wondering why I brought a pink cake.  :)  I guess I'll need to throw a football cake in there to man it up.  I'll let you know how everything turns out.  


Back to reality

So Sunday was my birthday!  I had a crazy birthday week.  Whatever could happen happened but my birthday weekend turned out great.  We all went ice skating at Piedmont Park and then went to Flip Burger for dinner.  Skating was fun but we didn't realize Piedmont's rink was so small and the ice was horrible.  Who would have thought we would appreciate Centennial's ice skating rink?  But the lights and music at Piedmont were nice and I think everyone had fun.  Flip Burger was great because they have great food.  I didn't realize how popular it has become, our wait was 55 minutes.  But I think it is worth it, their hamburgers and milk shakes are incredible.

Well, my DSLR  will not be available until mid-Febuary so I guess that will be a Valentine's Day present.  I have gotten electronics for the past 5 years for Valentine's Day so I guess we shouldn't break that tradition.  Here's a picture of my soon to be beautiful camera.


So since no camera,  JT and Addison took me to Williams-Sonoma and Anthropologie for a shopping spree on Sunday.  I'm so excited about two things I got at Williams-Sonoma.   The Prepara and a Cuisinart Ice Cream maker.

The Prepara is a herb savor.  I buy so many fresh herbs at the grocery store, like rosemary.  And they are dry in 5 days.  The Prepara will be a money saver.  The herbs are always in water so they won't dry out and you keep in your refrigerator door.  So simple, I could have thought of that.



My ice cream maker is what I'm really excited about.

There's blog a read call Oh Joy! and they have a recipe for a Coconut Frozen Yogurt that I have been dying to make.


The recipe is here.  Doesn't look yummy.   Of course I will be making homemade chocolate ice cream for Addison.  I don't think Addison has had homemade ice cream so I'm excited to make it for him.  I remember my grandmother making homemade ice cream and I tried to help turning the handle on the ice cream machine.  It was impossible to to turn.  Thank god for electronics.

Williams-Sonoma has a whole Star Wars line.  We got Addison the apron and the pancake molds but we definitely have to get these spatulas now.
