Inspiration

So today I finished shampooing the carpet in the rest of the house and then took Addison to diving.  Today, was a good no drama day.  I love surfing blogs to find inspiration on what I want to create.  I find the cutest stuff.  I love the internet!  I am so into reading other people's blogs, finding out about them and what they love.  Everybody is so creative.  It just makes me smile.

My Favorite Baking Recipes

So it's Wednesday and it has been raining all day.  Since I don't have to bake, cook, or take Addison to any activities today, today will be a card making lazy day.  But before I start making cards I thought I would start my Wednesday's Favorite Things.  I thought baking recipes would be good since people ask me for recipes on frosting and cakes.  It's hard to pick out my favorite but JT, Addison and I discussed it and we have decided on these.


Favorite cake:


The Neapolitan Cake - yes it was that good, JT and Addison are still talking about it. The bad thing is it's a lot of work. You have to make 3 different flavor cakes, strawberry jam, and frosting.  Because of this cake I have found my 3 favorite cake recipes.  I use them for everything now from cupcakes to whoopie cakes to just cakes.  


So here are my 3 favorite cake recipes:

Strawberry Cake 

Ingredients:
2 cups white sugar
1 (3oz) package of strawberry gelatin
1 cup butter, softened
4 eggs, room temperature
2 3/4 cups all-purpose flour
2 1/2 teaspoons baking powder
1 cup whole milk, room temperature
1 tablespoon vanilla extract
1/2 cup strawberry puree made from frozen sweetened strawberries (or you could use unsweetened and add a tablespoon of white sugar)

Method:

1. Prepare two 9″ round pans (butter and flour, or parchment lined).
2. In a large bowl, cream together the butter, sugar, and dry strawberry gelatin until light and fluffy. Beat in the eggs one at a time, mixing well after each. Mix vanilla and milk together. Combine and whisk dry ingredients, adding to creamed mixture and alternating with milk/vanilla until just combined. Blend in strawberry puree. Pour into prepared pans.
3. Bake in 350 F for about 25 minutes, or until inserted toothpick comes out clean. Allow cakes to cool in pans on wire rack for 20 minutes, then inverting onto wire rack to finish cooling.

Rich and Dark Chocolate Cake

Ingredients:
1 3/4 cups all-purpose flour
2 cups granulated sugar
3/4 cup Cacao Barry Extra Brute Cocoa Powder (or similar premium brand)
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
2 eggs
1 cup strong black coffee, cooled
1 cup buttermilk, room temperature
1/2 cup vegetable oil
1 tablespoon pure vanilla extract

Method:

Preheat oven to 350 F. Prepare 3 x 8" cake pans with butter and flour or parchment paper. In bowl of electric mixer, sift all dry ingredients. Add all remaining ingredients to bowl with the dry ingredients and with paddle attachment on mixer, mix for 2 minutes on medium speed (you may need the plastic splashguard that comes with mixer) and pour into prepared pans. Batter will be liquidy.

Bake for 20 minutes and rotate pans in oven. Cakes are done when toothpick or skewer comes clean--approximately 35 minutes. Try not to overbake. Cool on wire racks for 20 minutes then gently invert onto racks until completely cool.

Snow White Vanilla Cake

Ingredients
1/2 cup butter
2 cups white sugar
3 1/2 cups flour
1 teaspoon salt
3 teaspoons baking powder
1 1/2 cups ice water
1 teaspoon vanilla
1/2 teaspoon almond extract
4 egg whites beaten stiff

Method:

Add sugar to the butter and beat until light. Sift dry ingredients and add alternately with ice water and flavourings, beating thoroughly after each addition. Fold in the beaten egg whites. Pour into greased layer pans and bake at 350 degrees for about 30 minutes. Cover with Angel Feather Icing and be tactful about the number of candles.

My favorite out of these three are a toss between the chocolate cake and the strawberry cake.  I used to use the Hershey's recipe for a Moist Chocolate Cake that Katy sent me but now I use this one.  I believe the cup of coffee makes it so good.  The strawberry cake is so good because of the strawberry gelatin, I have used other recipes with just strawberries.  The gelatin makes it so strawberry.


Now my favorite icing:



Swiss Meringue Buttercream 

Ingredients:
5 large egg whites (30g each--total 150g)
1 cup plus 2 tablespoons superfine granulated sugar
1 pound (4 sticks) unsalted butter, softened, cut into cubes
2 teaspoons pure vanilla extract
Pinch of salt

Method:

Wipe the bowl of an electric mixer with vinegar on paper towel, to remove any trace of grease. Add egg whites and sugar,  and simmer over a pot of water (not boiling), whisking constantly, until temperature reaches 140 degrees F, or if you don't have a candy thermometer, until the sugar has completely dissolved and the egg whites are hot.

With whisk attachment of mixer, begin to whip until the mixture is thick, glossy, and cool. Switch over to paddle attachment and, while mixing on medium speed continuously, add softened butter in chunks until incorporated, and mix until it has reached a silky smooth texture (if curdles, keep mixing and it will come back to smooth).  Add vanilla and salt, mix well. Can also add fruit purees, extracts, or other flavourings.

Keep in airtight container in refrigerator for up to one week, leaving out at room temperature when needed, rewhipping in mixer for 5 minutes.

Can freeze for up to 6-8 weeks.

Malted Belgian Chocolate Frosting


Ingredients:
1 lb butter (4 sticks or 2 cups) at room temperature
4 cups icing sugar (confectioners' or powdered)
3 teaspoons pure vanilla extract
3/4 cup Ovaltine or malt powder
8 oz (250 g) Callebaut (or other premium brand) bittersweet chocolate chips, or chopped, and melted
1/2 cup whipping (35% fat) cream

Method:

In a bowl of stand mixer fitted with paddle attachment, combine the icing sugar and butter and beat on low speed for about 1 minute. Add vanilla and malt powder, and beat on low until well combined. Add the melted chocolate and beat on medium speed until smooth (about 2 minutes). Add whipping cream and beat on med-high speed for another minute. Best used right away.

My Favorite Chocolate Cream Cheese Frosting Recipe

Ingredients:

8 Oz cream cheese, room temperature
1/4 C unsalted butter, room temperature
4 C sifted powdered sugar (You can decrease this amount if you don't care about it being as stiff for piping)
1/2 C cocoa powder

Method:

Mix cream cheese and butter until smooth and creamy.
Mix in powdered sugar, one cup at a time.
Mix in cocoa powder.

Vanilla Bean Buttercream Frosting Recipe

Ingredients:

1 1/2 C confectioners' sugar (add more until it reaches your preferred consistency)
1/2 C unsalted butter (room temperature)
2 teaspoons vanilla bean paste (add more to taste)
1 tablespoon milk

Method:

Mix together sugar and butter until they are blended and creamy. Add vanilla bean paste and milk and continue to beat for another minute. If desired, add more vanilla bean paste to taste, or more confectioners' sugar to make it stiffer.

The Swiss Meringue Buttercream requires some work but it is so silky and smooth.  It is not a thick frosting neither is the Malted Belgian Chocolate.  I like silky frosting when I'm decorating cupcakes.  It has hard to pipe when the frosting is too thick.  The Chocolate Cream Cheese frosting is just really yummy.  It can be too stiff for cupcakes but I just had milk or heavy whipping cream to get it thinner.  The Vanilla Beam Buttercream Frosting taste like Vanilla Ice Cream it's think like the Chocolate Cream Cheese but you can thin it down. 

So here are my favorite baking recipes.  They are my go to recipes when I am baking for the family or for someone special.  I would say try the different icing to see what you like.  They are a mix between creamy to light and fluffy.

Happy Fat Tuesday

Sorry for not blogging but I have been so busy.  I was suppose to have a relaxing Spring Break but I don't get a Spring Break from being a mom and a wife.  Yesterday, I continued my de-clutter and cleaning mission.  I can say after this week the house will be spotless.  I also made cashew chicken for dinner last night.  I think I made it to get my Chinese food fix that wouldn't make me sick.  :)  I also made strawberry jam since we had 2 pounds of strawberries in the refrigerator that were about to go bad.

The strawberry jam turned out great.  Addison had plain greek yogurt with jam and then had strawberry jam on croissants.  I need to start giving away jam I think we have too much. 

Today I have been making phone calls, setting up dentist appointments, paying bills and taking Addison to his activities (so the usual).  Oh but I did make chili tongiht.  I have found the best chili recipe on the Williams-Sonoma website.  I have made all types of chili but when we made this one last month we knew it was the best so far.  The recipe calls for chuck roast cut up in 1-inch cubes instead of ground beef.  We use buffallo instead of beef to make it more delicious.  I swear it's the best chili you will ever make.  Here's the recipe:

Ingredients:
4 1/2 lb. beef chuck roast, cut into 1-inch cubes
Kosher salt and freshly ground pepper, to taste
5 Tbs. vegetable oil
3 large yellow onions, diced
2 carrots, peeled and diced
1 celery stalk, diced
2 red bell peppers, seeded and diced
10 garlic cloves, minced
2/3 cup chili powder
2 Tbs. ground cumin
1 Tbs. dried oregano
2 tsp. ground coriander
1 cup beef broth
2 cans (each 28 oz.) crushed tomatoes
1 can (15 oz.) kidney beans, rinsed and drained
1 can (15 oz.) black beans, rinsed and drained
1/4 cup finely ground cornmeal
8 oz. sharp cheddar cheese, shredded
3 cups tortilla chips
Guacamole for serving
Sour cream for serving

Directions:

Season the beef generously with salt and pepper. In the stovetop-safe insert of a slow cooker over medium-high heat, warm 1 Tbs. of the oil. Add one-third of the beef and sear until well browned on all sides, 6 to 8 minutes. Transfer to a large bowl. Sear the remaining beef in 2 more batches, warming 1 Tbs. oil in the insert before searing each batch.

Reduce the heat to medium and warm the remaining 2 Tbs. oil. Add the onions, carrots, celery and bell peppers and cook, stirring occasionally, until softened, 10 to 12 minutes. Add the garlic and cook, stirring frequently, for 1 minute. Add the chili powder, cumin, oregano and coriander and cook, stirring constantly, for 1 minute. Add the beef, broth and tomatoes, and season with salt and pepper.

Place the insert on the slow-cooker base, cover and cook on high according to the manufacturer’s instructions until the meat is tender, about 5 hours; during the last 30 minutes of cooking, stir in the kidney beans, black beans and cornmeal.

Position a rack in the middle of an oven and preheat the broiler. Top the chili evenly with the tortilla chips and sprinkle with 1 cup of the cheese. Transfer the insert to the broiler and broil until the cheese is melted, about 4 minutes. Serve with the remaining cheese, guacamole and sour cream alongside. Serves 10 to 12.

They also say to use a smoke gun to give the chili and smokey taste but I leave that out.  It is still great without the smoke flavor.  We will be eating chili for the next 2-3 days and won't be complaining.

I also made the chocolate marshmallow cake for dessert.  That bad thing, we had papa drama so no one really got to enjoy the chili or cake.  Addison and I did get to enjoy the marshmallow filling.  I think Addison enjoyed too much of it.  He passed out with a stomach ache.  Here's the cake:

Spring Cleaning

So I have good news and bad news.  The bad news is I got sick Saturday night.  I either had a stomach virus or it was the Chinese food.  Processed Food is BAD!!!  So I did not bake or cook, but the good news is we cleaned.  Every time I get sick I freak out about the clutter and make everyone clean.  I know I'm a horrible wife and mom.  But Addison's room and bathroom are spotless.  Addison took everything out of his closet.  All the clothes he couldn't wear went to Goodwill and he organized everything else.  JT really kicked butt today.  He moved everything under our bed and moved the furniture so he could shampoo our bedroom carpet.  It looks brand new and everything smells so good.  JT also took everything out of the linen closet, threw away old towels, and donated sheets to the Goodwill.  I scrubbed the doors, the base boards, and corners.  Our house looks so good I feel like I should get sick more often.  I told you I was terrible.

I also started reading a book about my camera.  I really need to sign up for a class but for now I really want to learn how to work everything.  My pictures are turning out good.  It's my actions shots that I'm not that excited about.  I really need to learn how to tweak my shutter speed, focusing, and how to follow my subject.  Addison's diving pictures were very hard to take and they still didn't turn out great.  The problem is diving is indoors so the light is not that great and he's pretty far away from me.  I hope this book will teach me a lot. 

Tomorrow will be a great day.  No school and Addison doesn't have any activites.  Maybe I will get some cooking and baking done.  We will just have to see.

Oh I almost forgot about my nails.  They held up!!!  I'm totally sold.  I scrubbed with bleach and soap today.  And I mean really scrubbed, I even used my nails to get up stuff.  Guess what?  No chips!!!  I couldn't believe it!  After washing and scrubbing I would think there would be some chipping but they look like I just got them done.  The bleach didn't even effect the shine.  I'm amazed!
